This dish features tender veal shanks that are braised in a flavorful tomato-based sauce until they're fall-off-the-bone tender. Here's what you'll need to make it:
Ingredients:
- 4 veal shanks, about 1 1/2 inches thick
- 1/2 cup all-purpose flour
- Salt and pepper, to taste
- 1/4 cup olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 1 cup beef broth
- 1 cup canned crushed tomatoes
- 1/2 cup dry white wine
- 1 bay leaf
- 1/4 cup chopped fresh parsley
Instructions:
1. Preheat the oven to 350°F.
2. Season the veal shanks with salt and pepper, then dredge them in the flour, shaking off any excess.
3. Heat the olive oil in a large Dutch oven over medium-high heat.
4. Add the veal shanks to the pot and cook until browned on both sides, about 5-6 minutes per side.
5. Remove the veal shanks from the pot and set aside.
6. Add the onion, carrots, celery, and garlic to the pot and cook until softened, about 5 minutes.
7. Add the beef broth, crushed tomatoes, white wine, and bay leaf to the pot and bring to a simmer.
8. Return the veal shanks to the pot and spoon some of the sauce over them.
9. Cover the pot and transfer it to the preheated oven.
10. Bake for 2-3 hours, or until the veal shanks are tender and the sauce is thickened.
11. Garnish with chopped parsley and serve hot.
