Ingredients:
- 1 cup Arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup dry white wine

8. After about 15-20 minutes, when the rice is tender but still slightly firm to the bite, add the chopped mushrooms and Parmesan cheese to the saucepan and stir to combine.
9. Cook for another 5-10 minutes, or until the mushrooms are tender and the cheese is melted and creamy.
10. Season with salt and pepper to taste.
11. Garnish with fresh parsley and serve hot.
