How to Make Classic Tiramisu: A Trattoria Don Pietro Recipe

This dessert features layers of ladyfingers soaked in espresso and liqueur, and a creamy filling made with mascarpone cheese and whipped cream. Here's what you'll need to make it:


Ingredients:

- 6 egg yolks

- 3/4 cup sugar

- 2/3 cup milk

- 1 1/4 cups mascarpone cheese

- 1 3/4 cups heavy cream

- 1/2 cup brewed espresso, cooled

- 1/4 cup coffee liqueur

- 24 ladyfingers

- Cocoa powder, for dusting


Instructions:

1. In a large bowl, beat the egg yolks and sugar together until pale and creamy.

2. In a separate saucepan, heat the milk over medium heat until it comes to a simmer.

3. Gradually pour the hot milk into the egg mixture, whisking constantly.

4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.

5. Remove the saucepan from the heat and let the mixture cool to room temperature.

6. In a large bowl, beat the mascarpone cheese until smooth.

7. In a separate bowl, beat the heavy cream until stiff peaks form.

8. Fold the whipped cream into the mascarpone cheese until well combined.

9. In a shallow dish, combine the brewed espresso and coffee liqueur.

10. Dip each ladyfinger into the espresso mixture, then arrange them in a single layer in the bottom of a 9x13 inch dish.

11. Spread half of the mascarpone mixture over the ladyfingers.

12. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.

13. Cover the dish with plastic wrap and refrigerate for at least 2 hours, or overnight.

14. Before serving, dust the top of the Tiramisu with cocoa powder.
